It’s the perfect combination of flavors and textures. 

Eating cold pre-cooked potatoes are great for your health! Cooling a potato creates resistant starch. These help reduce your blood sugar response and it helps you feel full longer. It’s good for your gut health because the resistant starch will feed the beneficial bacteria. Once cooled the sugars in the potatoes become resistant to human digestion, but they travel through the gut to feed the microbes.

Ingredients:

5 Red Potatoes- Roughly peeled

1 - 2 C Shredded Cabbage- I buy bagged pre shredded cabbage with carrots added.

2 TB Vinegar or Apple Cider Vinegar

1 Stalk Celery

4 GreenOnions (greens only for low FODMAP)

1 Cup Vegan Mayo

1 TB Yellow Mustard

1 tsp Celery Seed

1/2 tsp Salt

1/4 tspPepper

Directions:

  1. Place potatoes in a pot and add cold water. You can add a little salt to the water if you wish.

  2. Bring the water to a boil and cook for 20-25 minutes -until they are just tender enough to be pierced by a fork or knife.

  3. Allow the potatoes to cool.

  4. Add shredded cabbage and then mix in all the other ingredients. I recommend starting with 1 Cup of the cabbage and then you can add more from there to achieve your desired consistency of creaminess or lack thereof. I prefer the full 2 Cups but make it your own.

  5. Enjoy!
