A non-creamy style of coleslaw like you might find at some of your favorite restaurants. I developed this recipe for two reasons. One, for the pure enjoyment of having a coleslaw recipe in the style my friend likes. And two, because I wanted to make a Panini restaurant-style panini sandwich and therefore needed a non-creamy coleslaw to do so!

My critics informed me that my first attempt wasn’t zingy enough so after some tweaks I am happy to bring you the below version.

Ingredients:

1- 14 oz bag (about ¼ head) Cabbage

⅓ C White Vinegar

⅓-½ C Apple Cider Vinegar

1 TB Maple Syrup

3 TB Mustard

1 tsp Celery Seed

½ tsp Salt

½ tsp Black Pepper

Directions:

  1. Combine all the ingredients except the cabbage and whisk together thoroughly.

  2. Pour liquid over cabbage and stir to combine.

  3. Preferably allow it to sit for at least 30 minutes prior to use or prepare it the night before. This allows the flavors to blend. 

  4. Stir cabbage again prior to serving.

  5. Enjoy!
