Dark Chocolate
About 10 years ago after a struggle with eczema and psoriasis I found myself down a whole-approach, elimination-diet, lifestyle-changing journey. By the end of that first phase (and trust me, there have been many seasons and new challenges throughout the process) I had learned that I had a significant food sensitivity to sugar. I can't eat the stuff. It makes me sick and my body tries to deal with and process this “toxin” in all sorts of uncomfortable ways. I, however, love to bake and have a serious sweet tooth. So, thinking-cap on, I’ve found more than enough ways to cope. I enjoy plenty of sweets. And, the best part about it is - they are healthier too. In fact, I would say it's the way I believe we should all enjoy and indulge. We don’t have to completely say ‘no’ to treats in our attempts to be healthier. We just need to do it the right way. The Yes Lifestyle way.
Guilt-Free Dark Chocolate The Yes Lifestyle Way
Ingredients:
1 TB coconut oil
1TB liquid sweetener. Maple syrup, honey, or brown rice malt syrup are my favorites.
2-3 TB cocoa powder
Flavor extract or essential oil of choice (optional)
Directions:
The recipe is simple and done in minutes.
First, you want to use coconut oil that solidifies when it's at a cool temp. This is what holds it all together.
If your coconut oil is solid as you scoop it from your container, add this, plus your liquid sweetener of choice to a small bowl and microwave for about 10 seconds. Just enough to soften / liquify everything.
Give this a little stir and begin adding your cocoa powder one tablespoon at a time.
This is also when I would add flavors if you choose too. After that first table spoon I add one drop of very high-quality, certified-ingestible essential oil. Flavors like mint, honey, and cinnamon are my favorit. (For more on this check the link to my website under the Essential Oil tab)
Add your second tablespoon of cocoa powder, stir, and then carefully add the third.
You want to do this gradually only because if you choose to put it into a silicone candy mold you won’t want it too thick.
