Gluten-free, Dairy-free, Sugar-free, and vegan!

Who doesn’t love a quick and easy dessert that is ready in a matter of moments?!

This microwave cake is here for you. It's chocolaty, rich, gluten free, and an easy treat to make. It even has options to make it vegan.

I made this for my birthday dessert this year. It was a perfect easy treat to make and share with my boys. And we added ice cream of course! After all, it was a birthday party.

Ingredients Option 1:

4 TB Gluten-free 1:1 Flour

2 TB Cocoa powder

¼ tsp Baking Powder

3 TB sweetener (I combine 1 TB Maple syrup or Brown Rice Malt Syrup with 2 TB Lakanto or coconut palm sugar)

2 TB liquid ( coffee, non- dairy milk, milk etc)

1 TB oil

1 Egg

Ingredients Option 2:

A Fudgy Gooyer version: 

4 TB Bob’s Red Mill Gluten-free 1:1 Flour

2 TB Cocoa powder

¼ tsp Baking Powder

3 TB sweetener  (I combine 2 TB liquid sweetener- Maple syrup or Brown Rice Malt Syrup with 1 TB Lakanto, or coconut palm sugar)

3 TB liquid ( coffee, non- dairy milk, milk etc)

3 TB oil (high quality coconut oil, avocado oil, etc)

1 Egg

Cook in microwave for 1 minute to 1 minute 30 seconds

If you’re wanting a fudgier gooier version cook in one large mug instead of two separate containers. Then divide and share once it is cooked.

Some stores now sell cute little microwave cake molds. These work best with the top recipe.

Make it VEGAN:

Yes, that’s right! You can easily make this recipe vegan by using non-dairy milk or even coffee as listed above. 

Then, simply replace the egg with a flax or chia seed egg. This works best when making the cake in a mug. 

To make a Flax Egg or Chia Seed Egg simply use 1 TB of ground flax or chia seeds with 3 TB of boiling water. (Note: freshly ground sometimes works better.) Stir it together and allow it to sit for 3-6 minutes and turn gelatinous. It is a 1:1 replacement so simply dump this into your recipe and you are good to go!
