Celebrate your weekend, or any day, by enjoying this delicious, green, lucky, mint ice cream! It’s a wonderfully healthy alternative full of healthy fats and containing no added processed sugar. So you can enjoy your ice cream guilt-free! And, it’s vegan too!

Ingredients:

2 avocados

⅓  C Maple Syrup 

½  C Milk

1 tsp Peppermint Extract or 6 drops Young Living Peppermint Vitality Oil

1 pinch salt

¼ C HU Dark chocolate bar, chips, or gems (or, other no sugar added dark chocolate like Likanto brand or use one recipe of my Dark Chocolate)

Directions:

  1. Scrape the flesh out of two regular size avocados and place them into a high powered blender or food processor. 

  2. Add all other ingredients except for your dark chocolate and blend on high to achieve a nice smooth purée. 

  3. Transfer this mixture into an ice cream maker and turn it on. 

  4. Chop up dark chocolate into bits and add it into the mixture. 

  5. Allow it to churn according to the directions on your machine. However, please note that it can thicken much faster since the purée starts out thicker than regular milk or cream. 

  6. Allow it to harden more in the freezer for an additional 15-30 minutes or longer if you like your ice cream to be a thicker, harder consistency. 

  7. No ice cream maker? No problem! Stir chocolate bits into your purée and spread it into an 8x8 dish and place it into the freezer for a couple hours. You are all set. Enjoy!
