Mixed Summer Berry Crumble
A great way to use those delicious summer berries from your garden, the farmers market, or the latest grocery store sale.
Crust and Crumble:
2 C Oat Flour
½ C Whole Oats
¼ C Sweetener I use Lakanto Monkfruit Sweetener
½ tsp Baking Soda
1 tsp cinnamon
¼ tsp salt
¼ C Ghee or butter - melted
1 tsp Vanilla
¼ C Coconut Oil or additional butter- melted
Berry Filling:
3 ½ C Berries (strawberries, raspberries, blueberries etc. I used 2 C raspberries 1 C sliced strawberries, and ½ C blueberries)
1 TB Lemon Juice
1 ½ TB Cornstarch or Arrowroot
2 TB Lakanto Monkfruit Sweetener
Directions:
You can use fresh or frozen fruit for this recipe. I used all organic frozen berries. There is no need to thaw them out in advance!
Preheat your oven to 350 degrees.
Line the bottom of your pan with parchment paper.
Stir the lemon juice, sweetener, and cornstarch in with the berries and bring to a simmer over medium heat.
Allow berry mixture to simmer and thicken for about 5 minutes.
Set aside to cool.
Combine the dry ingredients for the crumble.
Then add ghee, vanilla, and coconut oil. Stir until it is well combined and crumbly.
Press half of the crumble mixture into the bottom of an 8x8 inch square pan. Pour the berry filling into the pan and spread it around evenly.
Sprinkle the remaining crumble on top of the berries filling.
Bake at 350 degrees for 25-30 minutes. The sides should be bubbling and the top should be golden.
Allow the bars to cool then cut into slices or simply scoop it out and enjoy!
