A delightful treat for any occasion. This easy-to-make recipe yields 4 nice servings. I even added notes below if you want to make it completely egg-free and dairy-free.

This cake is definitely a crowd-pleaser. Its petite size makes it feel so special, unique, and impressive. People are thrilled to see the multiple layers when you cut into it and then all it takes is one bite and they are even more in love with it. Ingredients

Cake:

2 TB Butter Melted

1 TB Milk

1 tsp Vanilla

1 Egg

4 TB Gluten-free All-Purpose Flour (I use Bob’s Red Mill 1:1)

2 TB Coconut Palm Sugar

¼ tsp Baking Powder

Topping:

8 oz Heavy whipping cream (or coconut cream - see notes below)

Fresh berries like strawberries, blueberries, and raspberries

2 TB Maple Syrup

1 tsp Vanilla Extract

Directions:

  1. Melt your butter in a mug. 

  2. Add all the other ingredients and stir until it is well combined.

  3. Microwave for 1 minute to 1 minute and 30 seconds. 

  4. Allow it to cool for 1 minute before removing it from your chosen microwave container. 

  5. Allow it to cool completely and slice into 3 layers.

  6. While the cake is cooling make your whipped cream. 

  7. Whipped together the ingredients in a bowl using an electric mixer. 

  8. Slice your cake into three layers.

  9. Beginning at the bottom place one layer of cake and add some whipped cream and berries. Repeat with the second layer.

  10. Add the top layer and coat the rest of the cake with your whipped cream and decorate with berries on top.

Egg-Free or Vegan Options:

Egg-free:

  1. Replace the egg with a flax egg. Or a flax-chia blend. Mix this in a mug and allow it to sit for a few minutes until it has become goopy. 

  2. Add your melted butter and then all other ingredients. 

  3. Cook for 1 minute 30 seconds. (times may vary depending on your microwave)

This cake will be denser and have a little bit of a chewy texture but still taste good. I’d even say great with the addition of the whipped topping and fruit!

Egg-free and vegan:
