Pizza Rolls
Made with gluten-free dough that you can shape and it even tastes good!
Yield: ~ 1 dozen
Why GF Pizza rolls? Well, why not? Sometimes I just like to see if I can recreate something. A fun childhood treat; not only are they tasty but fun thanks to their bite size portions.
Ingredients:
Dough:
- 1 C all-purpose gluten-free flour
- 1/2 cup cooked and mashed Sweet Potato (I prefer boiled but roasted works too)
- 2 ½ TB Tapioca starch / flour
- ½ tsp Salt
- 1 TB Extra Virgin Olive Oil
- 2 ½ TB Water
Filling:
- ½ can Tomato Paste
- ½ tsp Oregano
- ½ tsp Basil
- Pinch of salt
- 1 tsp garlic infused olive oil
- Mozzarella Cheese
- Pepperoni cut into quarters
Directions:
Preheat your oven to 400 degrees.
Combine all the ingredients for your dough. Knead it until it comes together completely.
Lightly dust a piece of parchment paper with tapioca flour.
Roll out your dough to about ⅛” - ¼” thick.
Slice it to rectangles that are about 2”x 4” in size.
Spread a small amount of sauce (about ½ tsp) in the center of each leaving about a ¼ “ border around the edge.
Sprinkle on a small amount of cheese and add a couple pieces of pepperoni.
Fold in half and pinch the edges together to seal.
Bake for 15-20 minutes. Rolls should be puffed up and golden.
