Mug Bread
I have a gluten-free microwave mug bread recipe. I use it as a base for all sorts of things. It’s a very versatile recipe that works with all kinds of flour. I typically use Bob’s Red Mill Gluten Free 1 to 1 Baking Flour. However, I have also made this very successfully with other gluten free blends, almond flour, oat flour, and almond meal. This is also the recipe I use for my gluten-free biscuit and gravy recipe.
Ingredients:
1 tsp or less Ghee or coconut oil
¼ C Gluten-Free flour of choice
¼ + ⅛ tsp baking powder
1 egg
Directions:
-Grease the inside of a 16 oz coffee mug well with coconut oil or Ghee
-Dump in ¼ C flour and baking powder and stir with a fork to combine
-Add egg and stir together to mix well
-Place in microwave for 1 ½ minutes and voila!
-Dump your “bread” onto a plate so it can cool enough for you to handle and slice it into rounds with a bread knife.
If making this for more than one person simply double the recipe.
Note: it will rise above the rim of the mug while cooking. It slices well and is even easy to toast in a fry pan. I’ve made mini sandwiches with it, grilled cheese, sweet breads and more! So say Yes to gluten-free convenience, and Yes to a healthy and happy you with The Yes Lifestyle.
